Our last supper club was a great sucess and this Lentil soup was the starter. The Indian theme certainly got our guests mouths tingling. So thought we'd share our spicy Lentil soup recipe taken from Das Sreedharan's Easy Indian book
Here goes:
125g Split Red lentils
50g Chana dal
50g Mung Beans
1 Onion - chopped small
1 Tomatio - diced
1 Green pepper - deseeded, chopped small
4 Garlic clove - peeled and chopped small
2 Green Chilli - finely chopped
2.5cm Ginger, finely chopped - or tsp of lazy ginger
1 tsp Chill powder
1 tsp Garam Masala
1 tsp Turmeric
salt
4 Tbsp of coriander leaves finely chopped - for decoration
Combine all the ingredients together with 2 pints of water, bring to the boil and then allow to simmer for 20 mons. oruntill the pulses are soft.
Sprinkle the Coriander leaves over serving for decoration.
Easy and delicious!
